OK, let’s get this part done first: Everybody, at the same time, say it with me, “No way!” That was my reaction when I saw this very unconventional method of cooking a roast, until I tried it. Now, I can’t imagine ever cooking a roast – at least an eye of round roast – any other way. If you’ve never had an eye of round roast, you’re in for a treat. It is one of the most delicious cuts of beef you’ll ever taste. But because it is a super-lean cut, it can tend to be tough. This is why I sought a cooking method to give a tender, juicy roast, instead of a tough, rubbery result. And this does the trick. It is called “high temperature eye of round roast” and my method is a slight variation of this recipe from allrecipes.com.
